How to prepare Alexandrian liver




Ingredients of Alexandrian liver:

  • 1/2 kg liver chambray
  •  4 cloves of garlic
  •  3 tsp ground cumin
  •  2 tsp ground coriander
  •  2 tsp salt
  •  1 tsp Tomato
  •  3 hot green peppers
  •  1/4 cup vegetable oil
  •  3 lemons, squeezed



How to prepare Alexandrian liver:

  1. Cut the liver into small pieces.
  2.  Mix garlic, cumin, coriander, salt, chutney and hot green pepper.
  3.  Mix them in a food processor until you have a homogeneous paste.
  4.  Add the mixture to the liver, stir and leave to infuse for 15 minutes.
  5.  Put the oil in a medium frying pan and heat it, then add the liver a little, a little, until browned. Add the lemon juice and simmer for 15 minutes.
  6.  Serve with spaghetti pasta or with small Vino sandwiches.
