How to prepare Alexandrian liver
Ingredients of Alexandrian liver:
- 1/2 kg liver chambray
- 4 cloves of garlic
- 3 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp salt
- 1 tsp Tomato
- 3 hot green peppers
- 1/4 cup vegetable oil
- 3 lemons, squeezed
How to prepare Alexandrian liver:
- Cut the liver into small pieces.
- Mix garlic, cumin, coriander, salt, chutney and hot green pepper.
- Mix them in a food processor until you have a homogeneous paste.
- Add the mixture to the liver, stir and leave to infuse for 15 minutes.
- Put the oil in a medium frying pan and heat it, then add the liver a little, a little, until browned. Add the lemon juice and simmer for 15 minutes.
- Serve with spaghetti pasta or with small Vino sandwiches.
