Egyption Tamiya
In Egypt, it is called taamiya and beans are included in its ingredients, but in the Levant, it is called falafel and it is made from chickpeas and spices only, and here is how to prepare the bait

Ingredients :
- 2 cups of peeled beans
- 1/2 cup of chickpeas
- 2 tbsp chopped dill
- 2 tbsp chopped coriander
- 5 cloves of garlic
- 1 tablespoon of water
- 1 teaspoon of carbonate of soda
- 1 teaspoon of salt
- 1/2 teaspoon fine cumin
- 1/2 teaspoon soft coriander
- For decoration :
- 3 tablespoons sesame seeds
Method of preparation:
- We put each of the grains separately in bowls and immerse them in water until the next day
- The next day, the grains have become soft and doubled in size, drain them from the water and put them in a large bowl
- Add chopped dill and chopped cilantro to it and mix them well
- Mash the garlic and add them to the mixture
- Add salt, cumin and soft coriander to the taste mixture and mix them well
- Using the kibbeh machine, we mash the ingredients until we form a cohesive dough
- Minutes before frying the delicacy, add the bicarbonate of soda mixed with a spoon of water and stir them well
- Put a generous amount of vegetable oil in a saucepan and let it simmer over medium heat until it becomes hot
- Using a falafel mold, we form the dough and put sesame seeds on it and put it in hot oil until it becomes golden in color
- Halve the delicacy kernels in a plate and be ready to serve
