 How to make an easy and delicious koshri



Ingredients for easy koshri:

- Onions for decoration

- Oil for frying

- 2 onions, finely chopped

Sauce ingredients:

- 2 tablespoons of olive oil

- 1 small onion, finely sliced

- 2 cloves of garlic, mashed

- 250 g of tomato paste

- 1 teaspoon of spices

- Salt + pepper + hot pepper slices

- 250 ml of water;

Koshari ingredients :

- 1 cup of medium-sized grain rice

- Salt

- 1 cup of green or brown lentils, wash until the water is clear

- 2 cups of pasta with small pieces

- 2 large onions, finely chopped

- 1 teaspoon of spices

Method of preparation :

1. Prepare the onion with which you are going to decorate the face, by heating a sufficient amount of oil in a frying pan, throw the chopped onion, stir until dark brown, remove from the oil and drain over paper napkins. And let it cool down.

2. To prepare the sauce

Put the oil and onions in a frying pan over medium heat, stir them until the onions are soft, put the garlic and fry it until it turns pale brown, then add the tomatoes, spices, salt, pepper, hot pepper slices, pour water and boil for 15-20 minutes, or until the amount of sauce is halved, remove them from the heat.

3. Heat 2 tablespoons of olive oil in a separate pan over medium heat, put the rice and 1 teaspoon salt and fry for 2 minutes, then pour 500 ml of water, stir well and bring to a boil, then reduce the heat to low, cover, to continue boiling for 15 minutes, until the rice is cooked.

4. Meanwhile, put the lentils in another pan with 500 ml of water, let them boil until the lentils soften a little, then drain, in another pan, boil the pasta with a pinch of salt and then drain as well.

5. Heat 80 ml of olive oil in a frying pan, put onions, stir to soften.

6. When serving, reheat the tomato sauce, put the hot pasta in a large plate, cover with a little olive oil, pour in the hot rice, lentils, onions, mix.

7. Sprinkle with spices on top, pour over them the desired amount of tomato sauce, garnish with crispy onions.
